Lawyers say they’re ‘still in dark’ about government’s efforts to free the man who was wrongly deported to El Salvador
The Trump administration is invoking the “state secrets privilege ” in an apparent attempt to avoid answering a judge’s questions about its erroneous deportation of Kilmar Ábrego García to El Salvador.
US district judge Paula Xinis disclosed the government’s position in a two-page order on Wednesday. She set a Monday deadline for attorneys to file briefs on the issue and how it could affect Ábrego García’s case. Xinis also scheduled a 16 May hearing in Greenbelt, Maryland, to address the matter.

The Trump administration is reportedly planning to deport a group of immigrants to Libya, despite a judge’s efforts on Wednesday to block any such flights and the state department’s previous condemnation of the “life-threatening” prison conditions in the country.
Reuters cited three unnamed US officials as saying the deportations could happen this week. Two of the officials said the immigrants, whose nationalities are not known, could be flown to the north African country as soon as Wednesday, but they added the plans could still change. The New York Times also cited a US official confirming the deportation plans.

It was met with cautious optimism – not least as both sides accused each other of violating the agreement within hours, with reports of cross-border shelling in Indian-administered Kashmir. Should the ceasefire pause the missiles, it won’t resolve the deeper dispute at the roof of the world.

As you may already know, the title of Britain’s Best Loaf 2025 was awarded to a brioche that was flavoured with lemon curd and earl grey tea. The inventor – Miyo Aoetsu, who runs a baking business from her home in Derbyshire – says the loaf was inspired by a recent Japanese trend for foods that combine the flavours of lemon and earl grey. But outside Japan, how many recipes can there be that use earl grey as an ingredient? Here are 17, just for starters.
The first, and most basic, is for earl grey itself. The connection between the tea and the 2nd Earl Grey, in whose honour it is sometimes said to have been concocted, is sketchy and possibly nonexistent. There is no official formula or authoritative version; it’s just a name given to black tea flavoured with bergamot, a type of bitter orange grown extensively in Calabria. Making your own is as simple as leaving some dried bergamot peel in a jar of black tea for a bit. The result will probably be a bit more subtle than store-bought – which usually contains oil of bergamot – but you may even prefer it.

Song He Lou, a historic restaurant brand that champions Suzhou cuisine, clearly believes there are big profits to be made in this postcode, and it has put its money where its mouth is by opening a whopping 144-seater right here in the centre of Chinatown. I’m not chucking in that “historic” willy-nilly, either: Song He Lou was founded in Suzhou near Shanghai almost 270 years ago, during the reign of Emperor Qianglong, and makes Rules in nearby Covent Garden, which is a piffling 227, look like a fly-by-night pop-up.

I’ve gone off script here and rated jarred chickpeas and tinned/packeted ones separately, because they’re such different beasts – and with a price point to reflect it. That said, I was pleasantly surprised by a few standouts in the tinned section, one of which is about to save me a fair amount of cash as I trade in my expensive jarred chickpea habit for a more frugal, but no less worthy alternative.
To taste these fairly, I drained and rinsed each one separately, labelled them up in bowls, then tasted them side by side. The ones I thought would benefit most from cooking each went into separate pans of malai sauce (albeit without cream) and were simmered, partially covered, for 25 minutes. The results were excellent in all but one case.

It felt like a classic British beach outing, but with more reliable weather. Toting umbrella, towels, sun cream, water and a cool-box picnic, my husband, son and I turned our backs on the marina in Porto Palo, near Menfi in south-west Sicily, and walked west. About 10 minutes on a narrow signposted coastal path brought us to Le Solette, a half-mile curving golden beach between rocky outcrops and backed by low hills. It’s a gorgeous spot, with soft sand and clear water in hues from turquoise to indigo – but the most remarkable thing about it is not what’s there, but what’s not.
Seaside resorts in north and central Italy are a strange phenomenon: the sand is usually almost invisible beneath pairs of sunbeds and matching umbrellas. OK, there is the convenience of loos and showers, but at what cost? I’ve been to resorts in Liguria, in north-west Italy, where from Easter to September a walk along the front affords views not of the sea but of the walls and changing cabins of an unbroken row of beach stabilimenti.

There are three kinds of family, muses the novelist and poet Ocean Vuong. There’s the nuclear family, “which often we talk about as the central tenet of American life”. There’s the chosen family, “the pushback”, the community and friendships built by people who have been rejected by their parents, often because of their sexuality or gender identity. And then there’s the family we talk about much less frequently, but spend most of our waking hours within – our colleagues, or what Vuong describes as “the circumstantial family around labour”.
Vuong’s forthcoming second novel, The Emperor of Gladness, encompasses them all. There’s its 19-year‑old hero Hai’s relationship with his mother, a poor Vietnamese immigrant who believes that he has fulfilled her desperate aspirations for him by going to university, when he has actually gone to rehab. (Vuong, who also struggled with drug addiction, didn’t dare tell his mother when he dropped out of a marketing course at Pace University in New York, before getting on to the English literature course at Brooklyn College that set the course for his life as a writer.) The core of the book is Hai’s relationship with Grazina, an elderly widow from Lithuania who has dementia, and who takes him in when she sees him about to throw himself off a bridge in despair. Then there are the eccentric and richly drawn staff members of HomeMarket, the fast food restaurant in which Hai works, with its manager who is an aspiring wrestler, and customers ranging from the snotty and entitled to the homeless and desperate.

Spicy, salty, sweet and sour all at the same time, kimchi is perhaps the perfect condiment. This Korean staple is traditionally made by salting cabbage to preserve it and add crunch, then fermenting it in a pungent paste often made from glutinous rice porridge, gochugaru (Korean chilli flakes), onion and enough garlic to keep a vampire at bay. Fish sauce is another common addition, as is, sometimes, even raw seafood such as crab or squid, but most kimchi sold in the UK is plant-based, and so appeals to a much wider audience.
The magic behind kimchi lies in the lactic acid bacteria naturally present on vegetables. These beneficial microbes are encouraged to thrive during fermentation, creating the complex, tangy flavours and deep umami that make kimchi so distinctive. All kimchi brings bold flavour, but only raw, unpasteurised ones deliver the probiotic benefits that come from live fermentation, so look for the words “raw” and “unpasteurised” on the label. Gochugaru, meanwhile, is what gives kimchi its signature vermilion hue. The brightness of its red-orange colour is a good visual cue as to how much chilli has been used and, as a result, how spicy the kimchi is.

Imagine a world in which you can do transactions and many other things without having to give your personal information. A world in which you don’t need to rely on banks or governments anymore. Sounds amazing, right? That’s exactly what blockchain technology allows us to do.
It’s like your computer’s hard drive. blockchain is a technology that lets you store data in digital blocks, which are connected together like links in a chain.
Blockchain technology was originally invented in 1991 by two mathematicians, Stuart Haber and W. Scot Stornetta. They first proposed the system to ensure that timestamps could not be tampered with.
A few years later, in 1998, software developer Nick Szabo proposed using a similar kind of technology to secure a digital payments system he called “Bit Gold.” However, this innovation was not adopted until Satoshi Nakamoto claimed to have invented the first Blockchain and Bitcoin.
A blockchain is a distributed database shared between the nodes of a computer network. It saves information in digital format. Many people first heard of blockchain technology when they started to look up information about bitcoin.
Blockchain is used in cryptocurrency systems to ensure secure, decentralized records of transactions.
Blockchain allowed people to guarantee the fidelity and security of a record of data without the need for a third party to ensure accuracy.
To understand how a blockchain works, Consider these basic steps:

Blockchain records digital information and distributes it across the network without changing it. The information is distributed among many users and stored in an immutable, permanent ledger that can't be changed or destroyed. That's why blockchain is also called "Distributed Ledger Technology" or DLT.

And that’s the beauty of it! The process may seem complicated, but it’s done in minutes with modern technology. And because technology is advancing rapidly, I expect things to move even more quickly than ever.
Even though blockchain is integral to cryptocurrency, it has other applications. For example, blockchain can be used for storing reliable data about transactions. Many people confuse blockchain with cryptocurrencies like bitcoin and ethereum.
Blockchain already being adopted by some big-name companies, such as Walmart, AIG, Siemens, Pfizer, and Unilever. For example, IBM's Food Trust uses blockchain to track food's journey before reaching its final destination.
Although some of you may consider this practice excessive, food suppliers and manufacturers adhere to the policy of tracing their products because bacteria such as E. coli and Salmonella have been found in packaged foods. In addition, there have been isolated cases where dangerous allergens such as peanuts have accidentally been introduced into certain products.
Tracing and identifying the sources of an outbreak is a challenging task that can take months or years. Thanks to the Blockchain, however, companies now know exactly where their food has been—so they can trace its location and prevent future outbreaks.
Blockchain technology allows systems to react much faster in the event of a hazard. It also has many other uses in the modern world.
Blockchain technology is safe, even if it’s public. People can access the technology using an internet connection.
Have you ever been in a situation where you had all your data stored at one place and that one secure place got compromised? Wouldn't it be great if there was a way to prevent your data from leaking out even when the security of your storage systems is compromised?
Blockchain technology provides a way of avoiding this situation by using multiple computers at different locations to store information about transactions. If one computer experiences problems with a transaction, it will not affect the other nodes.
Instead, other nodes will use the correct information to cross-reference your incorrect node. This is called “Decentralization,” meaning all the information is stored in multiple places.
Blockchain guarantees your data's authenticity—not just its accuracy, but also its irreversibility. It can also be used to store data that are difficult to register, like legal contracts, state identifications, or a company's product inventory.

Blockchain has a wide spectrum of applications and, over the next 5-10 years, we will likely see it being integrated into all sorts of industries. From finance to healthcare, blockchain could revolutionize the way we store and share data. Although there is some hesitation to adopt blockchain systems right now, that won't be the case in 2022-2023 (and even less so in 2026). Once people become more comfortable with the technology and understand how it can work for them, owners, CEOs and entrepreneurs alike will be quick to leverage blockchain technology for their own gain. A world away from Italy’s crowded beach resorts, the island’s south-west offers remote golden sands plus villages, vineyards and great restaurants
It felt like a classic British beach outing, but with more reliable weather. Toting umbrella, towels, sun cream, water and a cool-box picnic, my husband, son and I turned our backs on the marina in Porto Palo, near Menfi in south-west Sicily, and walked west. About 10 minutes on a narrow signposted coastal path brought us to Le Solette, a half-mile curving golden beach between rocky outcrops and backed by low hills. It’s a gorgeous spot, with soft sand and clear water in hues from turquoise to indigo – but the most remarkable thing about it is not what’s there, but what’s not.
Seaside resorts in north and central Italy are a strange phenomenon: the sand is usually almost invisible beneath pairs of sunbeds and matching umbrellas. OK, there is the convenience of loos and showers, but at what cost? They reflect a deeper pattern that I call the urgency-actionability trap: the impulse to respond to provocation, even when those responses, whether symbolic or military, offer little durable benefit and risk spiralling escalation.
India’s suspension of the Indus treaty is technically limited – it cannot “turn off the tap” overnight – but it sets a dangerous precedent in normalising water as a weapon. Pakistan’s retaliatory posture, similarly, satisfies domestic politics while weakening regional water security. Neither action advances stability; both reinforce distrust.

My expectations for the Ikea Valevåg were, to be polite, limited. Ikea’s mattress is less than a fifth of the price of a Simba Hybrid Pro – but somehow comes with the same 10-year guarantee. Seriously? Expecting a decade’s worth of blissful sleeps from a Valevåg sounds like an attempt to wear the same £8 Primark jumper every day until 2035.
But when I tested the Valevåg alongside several more expensive rivals, I realised it’s not the mattress equivalent of fast-fashion tat. Its price belies a well-constructed product with pocket springs that provide consistent support and snoozable comfort. It can’t compare with the pricey Simba or the best-in-show Otty Original Hybrid for ergonomic cosiness, but it’s a brilliant buy for a guest room or a young person’s bedroom.

The news that a child damaged a £42m Mark Rothko painting at a museum in Rotterdam last month had me wondering how I’d feel if my toddler was the culprit. The work, Grey, Orange on Maroon, No 8, sustained small, superficial scratches to the lower part of the painting during an “unguarded” moment, which, while not a disaster, does mean it will have to be taken off display and restored. It comes less than a year after a four-year-old boy smashed a 3,500-year-old jar at the Hecht Museum in Israel.
Honestly, I’d be mortified. Not embarrassed for my child, who is too little to understand, but because as his parent I had taken my eye off the ball. I would blame myself. I’d also be terrified I would be made to pay for it.

The climate crisis has taken a new and frightening turn, and in the expectation of disastrous flooding, the entire landmass of Denmark is about to be evacuated. Effectively, the country will be shutting itself down and sending its 6 million people abroad, where they will have to cope as best they can. Huge numbers of northern Europeans are therefore being turned into refugees: a few might have the wealth and connections to ease their passage from one life to another, but most are about to face the kind of precarious, nightmarish future they always thought of as other people’s burden.
Don’t panic: this is not a news story – or not yet, anyway. It’s the premise of an addictive new drama series titled Families Like Ours, acquired by the BBC and available on iPlayer. I have seen two episodes so far, and been struck by the very incisive way it satirises European attitudes to the politics of asylum. But what has also hit me is its portrayal of something just as modern: how it shows disaster unfolding in the midst of everyday life. At first, watching it brings on a sense of impatience. Why are most of the characters so calm? Where are the apocalyptic floods, wildfires and mass social breakdown? At times, it verges on boring. But then you realise the very clever conceit that defines every moment: it is really a story about how we all live, and what might happen tomorrow, or the day after.
The writer and journalist Dorian Lynskey’s brilliant book Everything Must Go is about the various ways that human beings have imagined the end of the world. “Compared to nuclear war,” he writes, “the climate emergency deprives popular storytellers of their usual toolkit. Global warming may move too fast for the planet but it is too slow for catastrophe fiction.” Even when the worst finally happens, most of us may respond with the kind of quiet mental contortions that are probably better suited to literature than the screen. Making that point, Lynskey quotes a character in Margaret Atwood’s novel The Year of the Flood: “Nobody admitted to knowing. If other people began to discuss it, you tuned them out, because what they were saying was both so obvious and so unthinkable.”

I can try to chalk this up to having read too much about how all our plastic waste ultimately ends up in landfill sites in the poorest parts of south-east Asia. I went on the defensive, citing half-imagined reports about megadumps in the Philippines and inescapable doom. She is only seen being stalked and stabbed in distant CCTV footage, has no lines, and her role is largely limited to a few photographs – including one that is framed and surrounded by flowers and balloons in an impromptu memorial, which wasn’t the easiest thing for her mother to see. Or in Holliday’s words: “She definitely felt a bit weird.”

The Atomic Clock Ensemble in Space (ACES), ESA’s state-of-the-art timekeeping facility, is now installed on the Columbus laboratory of the International Space Station. This still image, captured by external cameras on the Station, shows ACES after installation. For 25 years, cameras on the Station have documented activities in orbit, providing real-time views of operations like this one – a rare and remarkable perspective from space.
On 25 April, the Canadian Space Agency’s robotic arm carefully extracted ACES from the SpaceX Dragon trunk and secured it onto the Columbus External Payload Facility, next to ESA’s space storm hunter ASIM (Atmospheric-Space Interactions Monitor). Mounted on the Earth-facing side, ACES will connect with ground clocks worldwide as the Station orbits Earth sixteen times a day.
Developed by ESA with European industry led by Airbus, ACES carries the most precise clocks ever sent to space: PHARAO, developed by the French space agency CNES, and the Space Hydrogen Maser from Safran Timing Technologies in Switzerland. Together with a sophisticated microwave and laser link, they will compare time between space and Earth with unprecedented accuracy, testing fundamental physics and advancing future time standards.
In March 2025, ACES arrived at NASA’s Kennedy Space Center, where ESA, Airbus and NASA teams prepared the payload for flight. ACES launched on 21 April aboard a SpaceX Falcon 9 as part of the 32nd commercial resupply services mission to the International Space Station. Today, ACES was successfully switched on for the first time, establishing communications with ground control and stabilising its thermal systems in preparation for clock operations.
A six-month commissioning phase now begins, after which ACES will embark on its two-year science mission, opening new frontiers in fundamental physics and timekeeping.

Today at 10:15 CEST, ESA’s Atomic Clock Ensemble in Space (ACES) began its journey to the International Space Station on a SpaceX Falcon 9 rocket launched from NASA’s Kennedy Space Center in Florida, United States.
ACES carries the most accurate clocks ever flown in space – PHARAO and the Space Hydrogen Maser – designed to keep time so precisely that they would lose just one second every 300 million years. Developed by the French space agency CNES and Safran Timing Technologies in Switzerland, these European-built clocks will work with a sophisticated time transfer time using microwave and laser links to synchronise the best clocks all over Earth.
Later this week, the Station’s Canadian robotic arm will install ACES on the exterior of ESA’s Columbus module. From its vantage point 400 km above Earth, ACES will link its ultra-precise clocks with the best timekeepers on the ground, enabling groundbreaking tests of fundamental physics, including Einstein’s theory of general relativity. Over its 30-month mission, it will carry out extended measurement sessions to investigate the very nature of time and enhance global time synchronisation.
ACES is a fully European mission led by ESA, with Airbus as a prime contractor, and will be operated from control centres in France and Germany (CADMOS and Col-CC).
“The launch of ACES marks a major milestone for European science and international cooperation in space. With this mission, we are placing the most precise timepiece ever sent to orbit aboard the International Space Station — opening new frontiers in fundamental physics, time transfer, and global synchronization. ACES is a shining example of what Europe can achieve when we unite cutting-edge technology, scientific ambition, and strong partnerships”, says Daniel Neuenschwander, Director of Human & Robotic Exploration at ESA.

It is a uniquely modern arms race: high on nationalist fervour and habitual mistrust, choreographed so that each clash is always just one provocation away from becoming the last.
On Saturday, Donald Trump announced a “full and immediate” ceasefire between India and Pakistan. The truce, brokered by US officials, came amid speculation by military analysts that Pakistan was edging closer to using nuclear weapons. The climate crisis has taken a new and frightening turn, and in the expectation of disastrous flooding, the entire landmass of Denmark is about to be evacuated. Effectively, the country will be shutting itself down and sending its 6 million people abroad, where they will have to cope as best they can. Huge numbers of northern Europeans are therefore being turned into refugees: a few might have the wealth and connections to ease their passage from one life to another, but most are about to face the kind of precarious, nightmarish future they always thought of as other people’s burden.
Don’t panic: this is not a news story – or not yet, anyway. It’s the premise of an addictive new drama series titled Families Like Ours, acquired by the BBC and available on iPlayer. I have seen two episodes so far, and been struck by the very incisive way it satirises European attitudes to the politics of asylum. But what has also hit me is its portrayal of something just as modern: how it shows disaster unfolding in the midst of everyday life. At first, watching it brings on a sense of impatience. Why are most of the characters so calm? Where are the apocalyptic floods, wildfires and mass social breakdown? At times, it verges on boring. But then you realise the very clever conceit that defines every moment: it is really a story about how we all live, and what might happen tomorrow, or the day after.
The writer and journalist Dorian Lynskey’s brilliant book Everything Must Go is about the various ways that human beings have imagined the end of the world. “Compared to nuclear war,” he writes, “the climate emergency deprives popular storytellers of their usual toolkit. Global warming may move too fast for the planet but it is too slow for catastrophe fiction.” Even when the worst finally happens, most of us may respond with the kind of quiet mental contortions that are probably better suited to literature than the screen. Making that point, Lynskey quotes a character in Margaret Atwood’s novel The Year of the Flood: “Nobody admitted to knowing. If other people began to discuss it, you tuned them out, because what they were saying was both so obvious and so unthinkable.”

The US president has the leverage to force through a ceasefire. If he does not, he will implicitly signal approval of what looks like a plan of total destruction
Donald Trump would like a big foreign policy win as he embarks on his tour of the Middle East this week. He could secure one – and save lives – by demanding that Israel agree to a lasting ceasefire in exchange for the release of all hostages held in Gaza. He might prefer to avoid the issue, but no other leader has the leverage to force its prime minister, Benjamin Netanyahu, to end this war. If Mr Trump instead backs Israel’s current proposals, he will put the US imprimatur on what looks like a plan of total destruction.
Israel’s attacks have already killed more than 52,000 people in Gaza, according to local health authorities – the vast majority of them civilians, many of them children. Bakeries, hospitals and schools have been obliterated. Aid has been blocked for two months. Gaza faces famine. Last week, Israeli officials briefed that if no deal to free the hostages seized in the Hamas atrocities of 7 October 2023 is reached, its forces would flatten Gaza, forcing Palestinians to crush into a single “humanitarian area” or flee abroad. Bezalel Smotrich, the finance minister, said that Gaza would be “entirely destroyed”, and “totally despairing” Palestinians would realise “there is no hope”. He has said that freeing hostages is “not the most important thing”.

But in the meantime, business for Oasis tribute bands is booming. Why go all the way to Wembley when you can belt along to an Oasis tribute band in your local pub, metres and not miles away from “Liam” and “Noel”?
There is certainly no shortage of them. Our (rough) count shows at least 40 Oasis cover bands in the UK alone. But Oasis tribute bands are just as popular in Europe, the US, Canada and Japan, where the band have long had a huge following.

Rob Cornelis Maria Huijben, a 39-year-old Dutch diver, died on Friday while doing preparation work to cut the ship’s mainmast. He was employed by the maritime company Hebo, whose barge arrived last week in Porticello, a fishing port near Palermo. The luxury vessel was anchored just off Porticello when it was struck shortly before dawn by a violent storm on 19 August 2024. It sank within seconds, killing seven people, including Lynch and his daughter Hannah.

It felt like a classic British beach outing, but with more reliable weather. Toting umbrella, towels, sun cream, water and a cool-box picnic, my husband, son and I turned our backs on the marina in Porto Palo, near Menfi in south-west Sicily, and walked west. About 10 minutes on a narrow signposted coastal path brought us to Le Solette, a half-mile curving golden beach between rocky outcrops and backed by low hills. It’s a gorgeous spot, with soft sand and clear water in hues from turquoise to indigo – but the most remarkable thing about it is not what’s there, but what’s not.
Seaside resorts in north and central Italy are a strange phenomenon: the sand is usually almost invisible beneath pairs of sunbeds and matching umbrellas. OK, there is the convenience of loos and showers, but at what cost? I’ve been to resorts in Liguria, in north-west Italy, where from Easter to September a walk along the front affords views not of the sea but of the walls and changing cabins of an unbroken row of beach stabilimenti.

A recording of Pink Floyd’s eerie and evocative 1972 gig in the ruins of Pompeii, entitled Pink Floyd at Pompeii – MCMLXXII, has become the band’s seventh UK chart-topping album.
The album captures the gig that was documented by director Adrian Maben for one of rock’s most arresting concert films, which has been restored to 4K quality and rereleased in cinemas, including in Imax format. A recording of the gig was previously included as part of a larger Pink Floyd box set, but this is the first standalone version, featuring a new sound mix helmed by prog rock musician Steven Wilson.

Two of the officials said the immigrants, whose nationalities are not known, could be flown to the north African country as soon as Wednesday, but they added the plans could still change. There are three kinds of family, muses the novelist and poet Ocean Vuong. There’s the nuclear family, “which often we talk about as the central tenet of American life”. There’s the chosen family, “the pushback”, the community and friendships built by people who have been rejected by their parents, often because of their sexuality or gender identity. And then there’s the family we talk about much less frequently, but spend most of our waking hours within – our colleagues, or what Vuong describes as “the circumstantial family around labour”.
Vuong’s forthcoming second novel, The Emperor of Gladness, encompasses them all. There’s its 19-year‑old hero Hai’s relationship with his mother, a poor Vietnamese immigrant who believes that he has fulfilled her desperate aspirations for him by going to university, when he has actually gone to rehab. (Vuong, who also struggled with drug addiction, didn’t dare tell his mother when he dropped out of a marketing course at Pace University in New York, before getting on to the English literature course at Brooklyn College that set the course for his life as a writer.) The core of the book is Hai’s relationship with Grazina, an elderly widow from Lithuania who has dementia, and who takes him in when she sees him about to throw himself off a bridge in despair. Then there are the eccentric and richly drawn staff members of HomeMarket, the fast food restaurant in which Hai works, with its manager who is an aspiring wrestler, and customers ranging from the snotty and entitled to the homeless and desperate.

To be selected for Granta’s Best of Young British Novelists list two years before your debut novel comes out must bring a certain amount of pressure. Saba Sams had already been named a rising star for her short-story collection, Send Nudes; one of the stories, Blue 4eva, won the 2022 BBC National short story award. Now comes Gunk, titled for the grotty student nightclub managed by the thirtysomething protagonist, Jules. The fried egg on the cover hints at a sleazy edge: expect hangover breakfasts with a dawn chorus soundtrack. It’s also a playful nod to more tender themes of fertility panic, unplanned pregnancy and young motherhood.
At the heart of Gunk is a not-quite-love-not-quite-triangle between Jules, her feckless ex-husband Leon, nightclub owner and irredeemable waster, and the young, mysterious nim – that lower case “n” is all part of her vibe. Nim arrives one night at the club and captivates both Jules and Leon with her shaved head, her alluring mouth (“big and wet and laughing”), and the sense that she’s on the run from her old life. Much of the novel is told through flashback. Before we encounter nim at the club, we know that she has had a baby, left him with Jules, and vanished. Jules is alone trying to comfort a newborn that “knew by smell, by taste, that I was not his mother”. The main narrative consists of Jules telling us how this state of affairs came to pass.

Our in-house ferment fanatic Tom Hunt assesses a range of widely available versions of the increasingly popular Korean condiment
Spicy, salty, sweet and sour all at the same time, kimchi is perhaps the perfect condiment. This Korean staple is traditionally made by salting cabbage to preserve it and add crunch, then fermenting it in a pungent paste often made from glutinous rice porridge, gochugaru (Korean chilli flakes), onion and enough garlic to keep a vampire at bay. Fish sauce is another common addition, as is, sometimes, even raw seafood such as crab or squid, but most kimchi sold in the UK is plant-based, and so appeals to a much wider audience.
The magic behind kimchi lies in the lactic acid bacteria naturally present on vegetables. These beneficial microbes are encouraged to thrive during fermentation, creating the complex, tangy flavours and deep umami that make kimchi so distinctive. All kimchi brings bold flavour, but only raw, unpasteurised ones deliver the probiotic benefits that come from live fermentation, so look for the words “raw” and “unpasteurised” on the label. Gochugaru, meanwhile, is what gives kimchi its signature vermilion hue. The brightness of its red-orange colour is a good visual cue as to how much chilli has been used and, as a result, how spicy the kimchi is.
